The Method
A dream that takes shape, a wine that speaks of passion, tradition and an eternal bond with our land.
In the Heart of the Earth, the Dream of a Wine
A land marked by ancient suffering and sacrifice, today it offers conviviality and a unique wine.
The Vineyard
Piedimont is a Millesimato CRU obtained from the vinification of grapes Chardonnay, Pinot Noir and Ribolla Gialla, coming from the company's only vineyard, located on marly soils “Ponca” at an altitude of 100 meters in the town of Piedimonte in Gorizia.
On this hill, the sun sets early, falling around 17:30 behind Mount Calvario, even during hot summer days, allowing for the later harvest during the summer season.
This early sunset, which significantly reduces vineyard temperatures, allows intense aromas to be retained in the bunches and to avoid the presence of acidity and sourness.

I mosti ottenuti, dopo una 12-hour static decanting, are started, through the inoculation of selected yeasts, to alcoholic fermentation, carried out for 10-12 days at a temperature of 18°C.
