Vineyard located at the foot of Mount Calvario, with south-east exposure, benefits from a significant temperature range given by the setting of the sun behind the mountain already in the early hours of the afternoon. This change in temperature makes it possible to obtain a more intense sparkling wine with a non-raw acidity. The Chardonnay grape harvested to create Blanc de Blanc is carefully selected and vinified only in suitable years and with a limited production (about 2000 bottles).

Vinified in white.
The foaming is carried out in May.
The stay on the yeasts starts at 42 months.
A further aging in bottle after disgorgement lasts about 10 months.

The nose reveals scents of citrus fruits, in particular pink grapefruit and bergamot, and notes of medicinal herbs and rosemary continue.
In the mouth it is dry, direct, with a marked minerality but also elegant and harmonious.
