60% Chardonnay 20% Pinot Noir 20% Ribolla Gialla

Harvest period

Early September. The harvest is carried out entirely by hand in boxes. It is harvested only in the coolest hours of the day in order to maintain the integrity and the optimal temperature for the bunches.

Vineyard/Soil

Vineyard located in the town of Piedimonte in the municipality of Gorizia on shallow, marly soils at an altitude of 100 m above sea level.
Located at the foot of Mount Calvario, with south-east exposure, it benefits from a significant temperature range given by the setting of the sun behind the mountain already in the early hours of the afternoon.
This change in temperature makes it possible to obtain a more intense sparkling wine with a non-raw acidity.

Planting area 2m x 0.80 m. 1.2 ha of vineyard land with 7500 vines raised with the simple Guyot method

Vinification

The grapes are, through soft pressing, vinified separately in steel tanks. Only 5% of Chardonnay is aged in new 225l barrels.
The cuvée is assembled in the month of January, while the foaming takes place in May.

Aging

The stay on the yeasts is 69 months. This long aging, combined with the choice to produce a Pas Dosé, allows the wine to express the purity and quality of the vintage to the maximum. This is followed by further aging in bottle for about 12 months after disgorgement.

Disgorgement

November 2023 for 1.5 l bottles and February 2024 for 0.75 l bottles.

Tasting notes

Golden yellow color with a fine and persistent perlage. Mineral notes immediately emerge on the nose with an unexpected and welcome freshness, followed by hints of ripe fruit and citrus fruits. Complex aromas develop over time, recalling sweet spices and pastry notes.

On the palate it is silky and sapid, confirming the olfactory scents and creating a perfect balance between freshness and structure. It is surprising for its long taste and for a persistent aftertaste, which amplifies mineral and fruity sensations.

Pairing

Perfect as an aperitif, it goes well with raw and cooked fish, crustaceans, delicate first courses, raw meat and sausages. Ideal with blue cheeses and refined dishes such as truffles and foie gras.

Special features

The long stay on the lees is the result of a search for particular vintages that express to the maximum the quality of the vintage and the production philosophy.
A journey that requires patience and dedication, but which gives a result capable of enhancing every detail of the vintage.
